An heirloom chile from Chimayo, New Mexico, prized for its sweetness and great flavor. Dried, recently harvested chiles are generally available in late Fall (November).

Sandia Chile

Because Chimayo is actually a small community where people happen to grow chiles, not some large agricultural communities, there actually aren't that many Chimayo chiles grown in Chimayo. Most of the ones that are sold are actually from Sandia, where they've planted the same heirloom seeds. Because the water and soil conditions are different in Sandia, you can actually taste the difference in the chiles. Chiles grown in Chimayo taste sweeter.
