Boiled shrimp

From Burden's Landing

Boil for five pounds of shrimp:

  • 1 gallon water
  • 4 ribs celery
  • 2 yellow onions
  • 2 T black peppercorns
  • 1 cinnamon stick
  • 1/2 cup kosher salt
  • 1 T fennel seeds
  • 10 cloves of garlic
  • 1/2 c sugar
  • 3/4 c cider vinegar
  • 2 t ginger powder
  • 2 t brown mustard seeds
  • 2 t yellow mustard seeds
  • 5 whole cloves
  • 2 bay leaves
  • 1 T cayenne pepper

Bring to boil, then simmer for 30-40 minutes. Strain into second pot.
