Apple slaw

From Burden's Landing
  • 4 apples
  • 1 small head Savoy cabbage
  • 1/4 c slices scallions (green only)
  • 1 clove minced garlic
  • 1 t minced ginger
  • 1/2 minced small onion
  • 1/2 - 3/4 c mayonnaise, to taste
  • 2 oz cider vinegar

Grate apples and shred cabbage. Add scallions, garlic, and onion and stir in mayo and vinegar. Season to taste and adjust acidity. Chill.
