Duck eggs are approximately the same size as chicken eggs. The shells are thicker and stronger, and the egg white and yolk is stiffer. When you crack the egg, the yolk stands higher, and the egg does not disperse much. The yolk is more orange than a chicken egg, and there is a higher yolk-to-white ratio.
We made fried duck eggs for a sandwich on June 22, 2009. (We bought the eggs at [[Phipps Country Store and Farm]].) They taste slightly stronger than a chicken egg, but not significantly so.
We also used duck eggs in [[sugar cookies]].

Goose eggs are about twice the size of chicken eggs. They disperse fairly easily and have a large yolk. They're very light and quite tasty.
We made a goose egg omelette on June 27, 2009 from an egg we bought at [[Phipps Country Store and Farm]].

Do "better" eggs really taste better? No.

What's the best way to boil an egg? Start from hot water, and steam them.

Ostrich Eggs

About equivalent to 18-24 chicken eggs. They taste lighter, and the white (when boiled) is more translucent with an agar agar-like brittleness.

To make boiled eggs, boil for 2 hours.
