About equivalent to 18-24 chicken eggs. They taste lighter, and the white (when boiled) is more translucent with an agar agar-like brittleness.
To make boiled eggs, boil for 2 hours.
Whole Foods sells them annually in the spring. But they're expensive there -- $30 an egg! Lisa and Eugene bought one on June 14, 2009 that weighed about 3.5 pounds.
