* 2-3 tbsp chole masala (see below)
* 1 tsp cumin
* 1 tbsp coriander
* 1 tbsp red chile
* 1/2 tsp turmeric
* 1/4 tsp garam masala
* 1 onion, finely chopped
* Chopped tomato
* Chopped green chiles
* Chopped cilantro
* Salt
* Oil
To experiment:
* Pinch of [http://en.wikipedia.org/wiki/Asafoetida asafetida]
* 2 tsp mango powder
* 1 tablespoon gram flour (Besan)
* 1 large tomato
* Curry leaves

* Bay leaf
* Mustard seeds
* Cumin
* Coriander
* Cloves
* Red chilis
* Peppercorn
* Anaardana (pomegranate) seeds
Could also use cardamom, cinnamon, and fennel.

* Cook the chickpeas in a pressure cooker (!) until soft. Could add a pinch of baking soda and a tea bag (for color).
* Sautee the onions, garlic, ginger, tomatoes, and chiles.
* Add the spice.
* Add the chickpeas and water.
* Simmer.
* Add mango powder (amchur).
* Garnish with cilantro, and serve with sliced onions and lime.

Ingredients

  • 1 cup dried chickpeas
  • Equal parts garlic (~2 cloves) and ginger
  • 2-3 tbsp chole masala (see below)
  • 1 tsp cumin
  • 1 tbsp coriander
  • 1 tbsp red chile
  • 1/2 tsp turmeric
  • 1/4 tsp garam masala
  • 1 onion, finely chopped

  • Chopped green chiles
  • Chopped cilantro
  • Salt

  • 2 tsp mango powder
  • 1 tablespoon gram flour (Besan)
