Put a whole chicken in a pot breast-side down and plenty of ginger slices, and cover it with cold water. Bring to boil, skimming of scum and fat. For a five pound chicken, boil for about 30 minutes, then turn off the stove, flip the chicken, cover the pot, and let sit for an hour.

If you just boil the chicken, you'll make a delicious broth, but the meat will not absorb the flavors of the broth.

Save the broth, make chicken ginger soup with it, and use it as starter for your next poached chicken.
