  • 3/4 pound salt cod
  • 2 medium mashing potatoes (e.g. Yukon Gold), peeled and chopped. Probably could get away with one; it doesn't take much
  • 3 cups milk
  • 3 cloves of garlic
  • 1 onion
  • lots of chopped herbs
  • olive oil
  • salt and pepper to taste

Soak the salt cod.

Poach it in the milk with garlic and onion until flaky. Flake and debone.

Boil the potatoes in the milk.

Mash the potatoes. Mix in cod, herbs, olive oil, cooked milk, and salt and pepper until it reaches desired taste and consistency.

Notes

Do not blend! When I tried making it for the first time (March 17, 2012), I thought I would blend it. Blending, as it turns out, develops glutens in potatoes and makes it gluey.

When I made salt cod cakes, the green garlic just disappeared, even though I used a lot. I tried using dill in my brandade batch on March 17, 2012, but it didn't match well. Just use tons of herbs. Maybe bacon too.
