Baked soda

Literally baked baking soda, which converts the sodium bicarbonate into sodium carbonate (the desired, proton-free substance) and water and carbon dioxide. Known as jian in Chinese cooking. Used in ramen noodles, pretzels, etc.

Spread a layer of soda onto a foil-covered baking sheet and bake at 250-300 for an hour. Store in a tightly sealed jar. Avoid touching it.
