Apple slaw
From Burden's Landing
- 4 apples
- 1 small head Savoy cabbage
- 1/4 c slices scallions (green only)
- 1 clove minced garlic
- 1 t minced ginger
- 1/2 minced small onion
- 1/2 - 3/4 c mayonnaise, to taste
- 2 oz cider vinegar
Grate apples and shred cabbage. Add scallions, garlic, and onion and stir in mayo and vinegar. Season to taste and adjust acidity. Chill.
