Apple galette

Ingredients
- Pie dough
- About a pound of peeled, cored apples sliced thin
- 1/8 cup brown sugar
- Cinnamon, nutmeg, and whatever spices you want to use to taste. I'm generous with mine.
- 1/2 tsp cornstarch or 1/4 tsp agar agar
- 1 small lemon or 1/2 large lemon
- 1 egg
Recipe
- Preheat oven to 400 degrees
- Mix apples with sugar, spices, starch, lemon juice, and lemon zest.
- Roll out pie dough on parchment paper to 12ish inch circle. Place paper on baking sheet.
- Layer apples in the middle. Fold dough over on edges, crimping them together to form a seal.
- Beat egg, then brush onto crust. Added granulated sugar for added delight.
- Bake for 45 minutes. Crust should be brown, apples should be soft and caramelized.
